Berry Beet Smoothie

 

INGREDIENTS:

  • 1/4 Cup Coconut Milk

  • 1/4 Cup Water of Coconut Water

  • 1 handful spinach (about 1 Cup packed)

  • 1/4 Cup Beets

  • 1 Cup Frozen Berries

  • 1 scoop collagen powder or protein powder


INSTRUCTIONS:

  1. Add all ingredients except collagen/protein to blend and blend until smooth.

  2. Add collagen/protein and quickly blend again. This helps ensure it dissolves fully and there aren’t any clumps.



NOTES:

  • I prefer canned coconut milk for some healthy fat and creamier texture.

  • I lightly steam then cool my beets and store them in the fridge for the week. I find they blend better. But you can also use frozen beets, raw beets, or store bought brand like Love Beets.

  • You can use water or substitute coconut water for added electrolytes.

  • You can also add MCT oil or some avocado for added fat
