PB & J Overnight Oats

another great way to get collagen into your diet!

Supplies Needed:

  • 5 mason jars with lids, or 5 food containers (at least 12 oz) with tight fitting lids


Ingredients:

  • 2 1/2 cups Oats, divided

  • 5 tablespoons chia seeds, divided

  • 5 tablespoons raw pumpkin seeds, divided

  • 1 can coconut milk, divided **

  • 3 tablespoons collagen

  • 5 tablespoons strawberry or raspberry jam, divided

  • 10 tablespoons peanut butter, divided


Directions:

  1. Blend collagen and coconut milk until well combined.

  2. Pulse pumpkin seeds in food processor until a similar consistency to oats, about 3-4 seconds.

  3. Add 1/2 C of oats to each jar. Layer 1 tablespoon of chia seeds and then 1 tablespoon of pumpkin seeds on top of the oats in each jar.

  4. Equally distribute coconut milk and collagen mixture among all 5 jars. It will be about 1/4 cup each.

  5. Layer 1 tablespoon of jam and 2 tablespoons of peanut butter on the top of each jar.

  6. Seal with lid and refrigerate overnight.

  7. Stir well and enjoy within a week!


**Alternatively, you can substitute your favorite milk, coconut milk or almond milk. For creamier oats add more liquid, for chunkier oats add less.
